Knowledge management, intellectual capital and innovation of the fried plantain slices (MUSA AAB) production

Ecuador has important agricultural products, such as the male green plantain in its different varieties: Dominico, Maqueño and Barraganete, this is exported and another part is processed into chifles (thin fried plantain slices); allowing innovation processes in its production chain. The objective is to identify aspects of Knowledge Management, Intellectual Capital and Innovation in the productive chain of the “Chifle” Industry in the El Carmen Canton of the Manabí Province of Ecuador. The documentary and field research methodology was applied when observing the object. As a result: the Musa AAB barraganete plantain is the one most used in the production of chifle, its industrialization has standard processes that vary in taste and presentation, and its commercialization is national and international. In its results, the ephemeral information is visualized as support of the organizational structure, a potential element of expertise, but a weakened innovation.
